Charred Sage Leaves

Yields 6 ounces.:

 

3 each large sage leaves

4 oz. of sugar

4 oz. of water

 

Method:

  1. Take a creme brulee torch and slightly burn the sage leaves. I find that the best results come from aiming at the edges of the leaves.

  2. In a small saucepot, combine sugar, water, and sage leaves.

  3. Over medium-high heat dissolve the sugar giving a stir every a few moments to ensure that the sugar is completely dissolved.

  4. Once the sugar-water mixture is boiling, allow it to simmer for a minute and turn off the heat.

  5. Allow the sage leaves to steep in the syrup for about 15-20 minutes. The syrup should be sweet with subtle notes of smokiness and fresh sage flavor.

  6. Using a fine-mesh strainer strain the syrup into an airtight container. There should be a few black specks floating through the syrup.

  7. Store in the refrigerator for up to one week
