Charred Sage Simple Syrup
Finished Charred Sage Syrup
Charred Sage Leaves
Yields 6 ounces.:
3 each large sage leaves
4 oz. of sugar
4 oz. of water
Method:
-
Take a creme brulee torch and slightly burn the sage leaves. I find that the best results come from aiming at the edges of the leaves.
-
In a small saucepot, combine sugar, water, and sage leaves.
-
Over medium-high heat dissolve the sugar giving a stir every a few moments to ensure that the sugar is completely dissolved.
-
Once the sugar-water mixture is boiling, allow it to simmer for a minute and turn off the heat.
-
Allow the sage leaves to steep in the syrup for about 15-20 minutes. The syrup should be sweet with subtle notes of smokiness and fresh sage flavor.
-
Using a fine-mesh strainer strain the syrup into an airtight container. There should be a few black specks floating through the syrup.
-
Store in the refrigerator for up to one week
